This is my friend Tobey. She’s kind of the mother of us all in the bakery. She had already worked a long day and a long week yesterday and gone to her refuge in the woods when I threw my sciatic 20 minutes before my baking shift. Tobey does nearly all the dough mixing and a good share of the shaping, but her schedule hasn’t left much room for actually baking the bread recently, and she’s never fully operated this new oven. But she piled back in her car and rocked the evening bake for me while I sat in a comfy chair and told her how to run this beast of an oven. That’s her commitment to the food we make, and the community we are.

We’ve seen a new influx of customers these last three months, and we’ve noticed that these new folks don’t have the same human connection with us as our older supporters. It’s easy to understand that if you’ve never been inside the bakery, (which was designed in an open concept so you can see our craft in motion), and only ever ordered through our window you could see this as a production line kind of place. We’ve been discussing this shift a lot lately, thinking how to show the humanity, the camaraderie, the skill, patience and love that go into each loaf and treat. There couldn’t even a much better illustration of who we are than listening to Tobey’s joy and excitement when this first load came rolling out at the end of a very, very long day. .
